Flavorful Grilled Halibut and New Red Potatoes

I like to have fish at least once a week for so many reasons; fish makes me feel healthier, it's a nice change of pace from chicken and beef, and it just tastes yummy! It took me a while to convince my husband that not all fish tastes fishy. He despised fish and didn't want to give it a try. I finally convinced him to sample different ones and he now likes to try new recipes. Coincidently enough, he is often the one looking for the fish in season at Costco. He loved this recipe and said it was "a winner" and it's a winner in my book too, not only for the taste, but for the ease. For anyone that doesn't like fish, give this a try, your mind just might be changed!

Ingredients:
2 clove garlic, minced
3/4 cup olive oil
2 teaspoon dried basil
2 teaspoon salt
2 teaspoon ground black pepper
2 tablespoon lemon juice
2 teaspoon parsley
2 tablespoon fresh oregano, chopped
2 (6 ounce) filets halibut (or 1 - 12 ounce filet)
Approximately 6 new red potatoes, washed and sliced



Directions:
In a glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, parsley, and oregano.



Place the halibut filets and in a resealable bag, and pour half the marinade over the fish.



Seal and place in the refrigerator for at least 1 hour, turning occasionally. Put the potatoes in a foil packet and pour the other half of the marinade on top.  



I like to prepare the marinade when I get a spare minute during the day and marinate the fish and potatoes the rest of the day before grilling. Oil the grill grate and place the filet on the preheated grill. Discard the marinade. Grill filets 5 minutes per side or until flakes easily with a fork.

Cold Brewed Iced Coffee

Coffee... that dark delight.  I love coffee.  I can't get going in the morning until I have my coffee.  And sometimes a cup of coffee in the afternoon is just the thing to give me a jump start.  But on a summer dau, I don't want a hot beverage.  That's when an iced coffee is just the thing.  However an iced coffee from the coffeehouse can get pricey - and who wants to go out in the heat to get a drink?  So that is why I have learned to make my own cold brewed iced coffee!

Cold Brewed Iced Coffee

Start with a glass jar with a lid, ground coffee, and water.  I used a flavored coffee for mine.

Measure out ground coffee into the glass jar.  How much you use will depend on how strong you like your coffee.  I used a half cup.

Add cold water to fill.  Seal jar with lid.  Shake slightly.  Allow to refrigerate for at least 6 hours.
Drain liquid through a strainer lined with a coffee filter.
At this point, you can use the coffee right away.  Or it will keep in the fridge for several days.
To mix an ice coffee: Pour cold brewed coffee over ice to fill your glass 1/2 to 2/3 full.  Add milk/creamer/half and half to fill glass.  Add sweetener to taste.  Stir and enjoy!

S'more Pie!

I love S'mores.  The crispy, gooey toasty goodness of the marshmallows.  The chocolate.  The graham crackers holding the whole thing together.

I also love pie.  I mean.. .c'mon... it's pie people!  What's not to love?

So, it just seems like a natural idea to combine the two into one ooey, gooey, sweet delicious treat.  Doesn't it?  Yeah... you know it does!

I started with a pre-made graham cracker crust.  Tossed in enough mini marshmallows to line the bottom and put the whole thing under the broiler until the marshmallows had that crisp, slightly over-toasted thing going on that I really like.


While that cooled a bit, I created a chocolate cream pie filling which was poured into the crust right over top of the toasted marshmallows.  (I used the lazy gal's method found on the side of the Jello pudding box, but you could certainly do a from scratch filling)

Sprinkle more mini marshmallows on top.  Let the whole thing set in the refrigerator for a while.  Then slice and serve. 

It was delicious!  And yes, it really did give that yummy S'more taste in a pie!  I think next time I will add some chopped chocolate bar pieces on the top also.
